Today after a play date at a friends house Maggie and I made 2 batches of Whole Wheat Banana Coffee Cake. We had ripe bananas with no plans of being eaten so I made the 1st batch with Maggie helping and she made the 2nd batch on her own...and felt pretty proud of herself! One batch I bagged individually and put in a bowl on our breakfast table. She doesn't like to eat breakfast food early in the morning so she gets a breakfast bar (or banana cake!) on her own in the mornings while I get ready. The 2nd batch we bagged up for her teacher and student teacher, her new GT teacher, her old GT teacher and her LDC teacher. Maggie loves her teachers and enjoys surprising them with treats!
As fate would have it, I am forever blessed to be the mother of one exceptional daughter, Maggie and to be married to my high school sweetheart, Big Ian. Amidst the constant pandemonium and chaos that I have somehow become accustom to, I am also a 1st grade teacher and fighting stage 4 lung and bone cancer...and still standing!
